Online resources from the home-canning community

The following is a list of online resources for home canning learning and questions which are run by “non-professionals”: that is, people not in the employ of a university or a canning supply company.

They have been selected for inclusion on this list because as a general principle they do try to follow the safe guidelines put out by the USDA and the National Center for Home Food Preservation.

Some of these people will have been  certified as Master Food Preservers. Some of these will work with Master Food Preserver sites listed under “Extension web sites”, others have struck out on their own in areas where the Master Food Preserver programme is not available to them.

NOTE: It is very easy to nit-pick and say that one person cheated in a canning recipe and used canned tomatoes, for instance. But such a “transgression” isn’t necessarily a mortal sin, and in the grand scheme of things we are working on the principle of harm-reduction here: people are going to be trawling the web for more resources beyond USDA, Ball and Bernardin, whether the ultra-extreme Canning Police like it or not, so it’s best to steer them to community sources who make a strong effort to adhere to and promote safe canning advice.
