    Hi, I’m new to canning and I struggle to understand how recipes can be adjusted. I read that I shouldn’t substitute meat or vegetables by beans or up the amount of beans in a recipe due to the higher density of beans. But beans can be pressure canned as well. Would it be fine to up the amount of beans as long as I use the longer pressure canning time for canning beans instead of the original canning time? If not, please explain why my reasoning is not sound.

    Can I large grind green tomatoes for green salsa. Peeling green tomatoes are difficult for me because of arthritis.

    I made spaghetti sauce using hunts canned tomato sauce and want to know if it is safe to can the leftover spaghetti sauce.

      Do not home can leftover food. Only can recipes that have been research-tested specifically for home canning.
