DIY Brownie Mix

You can make your own brownie mix for pennies on the dollar.

You get convenience at time of use, plus savings compared to buying store mixes. 

These are cake-style brownies, rather than fudgey-type.

We give the recipe and nutrition using Splenda® but you can of course go ahead and try instead white granulated sugar instead if you wish!

The recipe

Yield: One batch of mix makes 8 cups / 1 kg. This is enough mix for 5 pans of brownies.

Made-up yield: An entire pan of brownies made from this mix (not including pan) weighs about 420 g / 15 oz. Cut into 9 squares, each brownie square will weigh approximately 50 g / 2 oz. (will vary depending on whether nuts are added or not.)

Ingredients

  • 700 g all-purpose flour (4 cups)
  • 100 g Splenda® No Calorie Sweetener, Granulated (4 cups)
  • 100 g regular unsweetened cocoa powder (2 cups)
  • 2 tablespoons baking powder
  • 1 ½ teaspoons salt
Metric - US Customary

Instructions

  • Wash hands with soap and water.  Ensure worksurface is clean.
  • Mix all well.
  • Store in tightly-sealed 2 litre / quart jar, in a cool, dark place for best storage life.

Notes

Regard raw flour as you would raw meat and after preparing recipe, wash hands and any surfaces that may have come into contact with it.

Serving: 5g

If you want to try using granulated white sugar instead of the Splenda®, 4 cups / 900 g of sugar would be the equivalent.

Instead of brand-name Splenda®, you can use a generic brand of sucralose. You might even wish to try another sweetener such as a powdered stevia product which by volume measures one-to-one with the Splenda® measurements mentioned above.

Brownies from DIY Brownie Mix

Delicious brownies made from your homemade DIY brownie mix

Ingredients

  • 75 g margarine (1⁄3 cup. Soft low-fat. Or butter)
  • 2 eggs
  • 1 tsp vanilla extract
  • 75 ml applesauce (1⁄3 cup. Unsweetened )
  • 175 g dry brownie mix (1 ½ cups)
  • 40 g walnuts (1⁄3 cup, chopped. Optional)

Instructions

  • Wash hands with soap and water.  Ensure worksurface is clean.
  • Grease a 20 cm (8-inch) square pan. Set aside.
  • Start oven heating to 175 C (350°F).
  • In a mixer bowl, beat margarine, eggs and vanilla for 1 minute.
  • Add applesauce; beat briefly just until blended.
  • Add dry mix (and nuts if using); stir by hand until just blended.
  • Spread evenly in prepared pan.
  • Bake at 175 C (350°F) for about 15 minutes or until tester such as a toothpick inserted in centre comes out clean.
  • Cool on rack, then slice into squares.
  • Store in covered container in refrigerator.

Nutrition

Nutrition will vary based on ingredients you used, but if you use Splenda® for the mix and low-fat margarine to make a batch from the mix, there are 116 calories and 8 g fat per 50 g / 2 oz. brownie (if a pan of them is sliced into 9 squares.) If you add the walnuts, there’s 131 calories and 10 g fat per brownie. 

For those following Weight Watchers®, there are 2 SmartPoints® freestyle per brownie, with an extra point per brownie if adding the nuts.
